From time to time we are asked to define what kind of cuisine we make here. The easiest way to describe us is fusion-confusion depending on which part of the world our inspiration currently comes from. Our menu blends both fast and slow cooking \u2013 combinig the best qualities of them both. You can find ramen-inspired noodle dishes, Middle Eastern pearl coucous, Mediterranean hummus, Thai inspired red lentil soup and spicy Korean kimchi cabbage. One thing is certain \u2013everything that comes from our kitchen is made with love!<\/p>\n<p>The idea to establish a second restaurant came from our two head chefs. They are true artists at their heart. Our first restaurant Moon has a very distinctive style of cooking and this set\u00a0too many\u00a0limits to the two creative souls in the kitchen.\u00a0So our chefs\u00a0came up with the concept of Kolm Sibulat.<\/p>\n<p>We consider Kolm Sibulat as\u00a0the baby brother of Moon. An unusual name, an unsual location, but otherwise very homely and cozy.<\/p>\n<p>Yours truly,<br \/>\nRoman, Igor ja Jana<\/p>\n<h3>Our Ramen<\/h3>\n<p data-start=\"31\" data-end=\"660\">The kitchen of Kolm Sibulat in the Maakri quarter has found a new heartbeat through our ramen. While we initially planned to bring in a special ramen machine from Japan, our chefs\u2019 inspiration eventually took things to an entirely new level. The experience gained at a ramen-making course in Amsterdam and the discovery of organic grains from Koksvere Mill inspired us to create a ramen that is truly unique and crafted to our own taste. The grains are roasted and milled with a wooden mill right here in our kitchen, and from them we prepare noodles with a distinctive nutty and creamy flavor found only at Kolm Sibulat.<\/p>\n<p data-start=\"662\" data-end=\"1176\">The soul of our ramen also lies in the broths \u2013 each one receives time, care, and love. Alongside more classic flavors, our menu features unexpected combinations such as lamb kharcho ramen, pork belly with sauerkraut ramen, French onion soup ramen, and a vegan tofu-peanut ramen. In the evenings, we serve even more refined creations, including ramen with octopus, scallop, or beef carpaccio. Our chefs are not afraid to play with flavors, and even our guests from Asia have praised this boldness and creativity.<\/p>\n<p data-start=\"1178\" data-end=\"1417\">Thus, ramen at Kolm Sibulat has grown from a simple idea into one of the most heartfelt and distinctive parts of our kitchen \u2013 a dish that unites the best of Estonian ingredients with the spirit of Asia into a unique culinary experience.<\/p>\n<h3>\ud83c\udf40 <span class=\"Y2IQFc\" lang=\"en\">Green Footprint <\/span><\/h3>\n<p class=\"tw-data-text tw-text-large tw-ta\" dir=\"ltr\" data-placeholder=\"T\u00f5lge\" data-ved=\"2ahUKEwit-dyZ2eSDAxVrFBAIHXrDBzIQ3ewLegQIBRAQ\"><span class=\"Y2IQFc\" lang=\"en\">In our new location, we have been able to add several new sustainable measures.<br \/>\n<strong>Water<\/strong> &#8211; we offer our guests a more planet-friendly solution, the Groche water filtration system, which cleans our tap water with carbon filters, and therefore we have less packaging waste and controlled water use.<br \/>\n<strong>Food<\/strong> &#8211; In our Kolm Sibulat restaurant menu has always had an important place and a good selection of vegetarian and vegan food. We were also able to take our ramen to a new level. In other words, our head chef took it to the point where we make all our noodles completely from scratch. We use organic-eco grains from the Koksvere Mill, from which we grind flour on the spot and make the appropriate dough from which our wonderful noodles are made. A long process, but very worth the effort.<br \/>\n<strong>Drink<\/strong> &#8211; we offer our visitors the products of various local Estonian producers, such as craft lemonades from \u00d5ie and Ingel, and local beer from both P\u00f5hjala and P\u00fchaste breweries.
